Marinate: (not really necessary)
Mix together:

  • 1 Cup of water (or beer)
  • Minced onion
  • 1/2 cup Maple Syrup
  • 1 cup ketchup (BBQ sauce or salsa or chilli sauce)
  • Tabasco (or chilli peppers ) –amount dependent
  • Diced Green Pepper (diced fine)
  • Salt/Pepper

Sear the Ribs:
Sear Ribs on a frying pan (preferably cast iron) approx 3 minutes each side– can add a little butter
Cooking the Ribs:
Put ribs in roasting pan and pour sauce over them & cover pan.
Cook in oven 1 – 1.5 hrs at 350
Or … on BAR-B-Q indirect heat for 1 – 1.5 hrs at 350
Let sit:
Take them out of oven (bbq) let sit in juices for 20 minutes (optional but they’ll soak up even more flavour)
